Ingredients

  • 2 cups fresh pineapple cut into small pieces
  • 1 15-ounce can mandarin oranges, drained
  • 14 ounces maraschino cherries drained
  • 1 cup sweetened shredded coconut
  • 3 cups mini marshmallows
  • 1 1/3 cups heavy cream
  • 3 tablespoons sugar or more to taste
  • 1/4 cup sour cream
  • Optional:
  • 1 cup green grapes halved
  • 1/2 cup chopped pecans

Equipment

  • Large mixing bowls
  • Hand mixer or whisk
  • Spatula
  • Knife and cutting board

Method

  1. In a large mixing bowl, whip the heavy cream and sugar until soft peaks form.
  2. Gently fold in the sour cream. Adjust sweetness by adding more sugar if desired.
  3. In another large bowl, combine pineapple, drained mandarin oranges, drained cherries, coconut, and marshmallows.
  4. Ensure all fruit is well drained to prevent excess liquid.
  5. Carefully fold the whipped cream mixture into the fruit mixture until evenly combined.
  6. Cover and refrigerate for at least 2 hours to allow flavors to develop.
  7. Serve chilled.
  8. Drain fruit thoroughly to avoid a watery texture.
  9. Chill before serving for best flavor and consistency.
  10. Add nuts or grapes for extra texture and variety.
