Ingredients
  

  • Half loaf French baguette sliced
  • 2 tablespoons olive oil
  • 12 cherry tomatoes halved
  • 12 slices fresh mozzarella
  • 12 fresh basil leaves
  • 1 tablespoon coarse salt
  • 3 tablespoons balsamic drizzle

Method
 

  1. Cut the baguette into even rounds.
  2. Brush both sides of each slice with olive oil.
  3. Toast until golden and crisp.
  4. While still warm, rub each slice lightly with garlic.
  5. Place one slice of fresh mozzarella on each crostini.
  6. Add halved or sliced cherry tomatoes on top.
  7. Lightly sprinkle coarse salt over the tomatoes.
  8. Add a light drizzle of balsamic over each piece.
  9. Tear the basil leaves and place on top.
  10. Serve right away for the best texture and flavor.
