Chocolate Cake
  • ½ cup unsweetened cocoa powder 40g
  • 1 cup boiling water or very hot coffee 240ml
  • 3 cups all-purpose flour 360g
  • cups granulated sugar 500g
  • teaspoons baking soda
  • teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup vegetable oil 240ml
  • 1 cup whole or low-fat buttermilk room temperature (240ml)
  • 3 large eggs room temperature
  • 1 tablespoon vanilla extract
  • Strawberry Buttercream
  • cups unsalted butter room temperature (340g)
  • pinch of salt
  • 6 to 8 cups confectioners’ sugar 720g – 960g
  • ½ cup chopped fresh strawberries about 6 berries
Ganache
  • ounces semi-sweet chocolate bar chopped (98g)
  • ½ cup heavy whipping cream 120ml
Garnish
  • fresh strawberries

Method
 

  1. Preheat oven: Set oven to 350°F. Prep your cake pans with butter and parchment.
  2. Make cocoa mixture: Whisk cocoa powder with hot water or coffee until smooth. Let it cool slightly.
  3. Mix dry ingredients: In a large bowl, whisk flour, sugar, baking soda, baking powder, and salt.
  4. Combine wet ingredients: Add oil, buttermilk, eggs, and vanilla to the cocoa mixture. Mix well.
  5. Make batter: Pour wet mixture into dry ingredients and whisk until smooth.
  6. Bake: Divide batter into pans and bake for about 30 minutes until springy. Cool completely.
  7. Make frosting: Beat butter and salt until fluffy. Slowly add sugar and strawberries, mixing until smooth and light.
  8. Assemble layers: Place one cake layer, spread frosting, repeat with second layer, then top with third.
  9. Frost outside: Cover the entire cake with remaining frosting. Chill for at least 1 hour.
  10. Make ganache: Heat cream, pour over chocolate, let sit, then whisk until smooth.
  11. Add ganache: Pour over cake and let it drip down the sides. This is the fun part.
  12. Garnish: Top with fresh strawberries and chill until set.
