- Thinly slice the red onion with the grain.
- Place onion in a bowl with salt, pepper, and lime juice.
- Toss well to coat.
- Add diced fish to the bowl.
- Add minced garlic.
- Add finely chopped chili pepper (start small, add more later if desired).
- Gently mix to combine.
- Add tomatoes.
- Add diced cucumber.
- Add chopped cilantro.
- Add olive oil, if using.
- Stir gently until evenly combined.
- Cover and refrigerate for at least 30 minutes (45–60 minutes ideal).
- Taste and adjust salt or heat before serving.
- Gently fold in diced avocado right before serving, if using.
- Serve with tortilla chips or lettuce cups.
Optional Avocado Sauce Instructions
- Add avocado to a blender.
- Add cilantro.
- Add water.
- Add olive oil.
- Add salt and coriander.
- Add lime juice.
- Add garlic and cracked pepper.
- Blend until smooth.
- Add more water or oil if needed for blending.
- Serve alongside ceviche.
