Ingredients
  

  • 2 cups all-purpose flour
  • 4 Tbsp granulated sugar
  • 4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 3/4 cups milk
  • 4 Tbsp unsalted butter melted
  • 2 tsp pure vanilla extract
  • 1 large egg

Method
 

  1. In a large bowl, combine all the dry ingredients. Create a well in the center, then add the milk, melted butter, vanilla extract, and egg.
  2. Whisk everything together until the batter is smooth. A few small lumps are fine. The batter should be thick—add a little extra milk if you prefer a thinner consistency.
  3. Heat a nonstick pan or griddle over medium-low heat and lightly grease it with butter.
  4. Pour about ¼ cup of batter onto the pan and gently spread it into a round shape using the back of the measuring cup.
  5. Cook until the bottom turns golden and bubbles begin to form on the surface. Flip using a spatula and cook the other side until golden.
  6. Repeat with the remaining batter. Serve warm with maple syrup, honey, or fresh fruit.
