In a shallow dish, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until well combined.
Heat a nonstick skillet or griddle over medium heat and lightly brush with butter or oil.
Dip each slice of bread into the egg mixture, turning to coat both sides evenly.
Place the coated bread slices onto the hot skillet.
Cook for about 2 minutes per side, or until golden brown.
Reduce the heat to low if needed so the toast cooks through without burning.
Cook in batches if necessary, adding more butter to the pan between batches.
Serve warm with maple syrup and/or a dusting of powdered sugar.
