Ingredients
  

  • 2 pounds Yukon Gold potatoes peeled and quartered
  • 2 Green onions chopped (including green tops)
  • 8 ounces milk
  • Salt and freshly ground black pepper to taste
  • ¼ cup butter
  • 1 tablespoon butter
  • Chopped green onions

Equipment

  • Large pot
  • Colander or strainer
  • Potato masher
  • Skillet
  • Wooden spoon or spatula
  • Measuring cups and spoons

Method
 

  1. Place the peeled and quartered potatoes in a pot of salted water.
  2. Bring the water to a boil and cook the potatoes for about 15 minutes until they are soft.
  3. Drain the potatoes and mash them until smooth.
  4. In a skillet, melt the butter over medium heat.
  5. Add the chopped green onions and sauté for about one minute until they soften.
  6. Pour in the milk and add salt and pepper.
  7. Simmer on low heat for about 2 minutes, making sure the milk does not boil over.
  8. Pour the green onion mixture into the mashed potatoes.
  9. Mix everything together until creamy and well combined.
  10. Serve warm with an extra pat of butter and a sprinkle of chopped green onions if you like.
