Ingredients

  • 2 teaspoons superfine sugar
  • 6 to 8 fresh mint leaves
  • 2 to 3 ounces club soda divided, to taste
  • 1 lime
  • 2 ounces light rum
  • Mint sprig for garnish

Equipment

  • Highball glass
  • Muddler or spoon
  • Knife (for lime)
  • Spoon for stirring

Method

  1. tep 1: Start with sugar and mint: Add sugar, mint leaves, and a splash of club soda to your glass.
  2. Step 2: Muddle gently: Press lightly to release mint flavor and dissolve sugar. Don’t destroy the leaves. I’ve done that. Not great.
  3. Step 3: Add lime juice: Cut the lime, squeeze both halves into the glass, and drop one half in if you’re feeling casual.
  4. Step 4: Pour the rum: Add rum and give it a good stir. Things are shaping up.
  5. Step 5: Add ice and soda: Fill with ice cubes, then top with more club soda to your liking.
  6. Step 6: Garnish and serve: Add a mint sprig, take a second to admire it, then drink immediately.
