Gather all ingredients.
In a small bowl, combine yeast, sugar, and warm water.
Let stand about 5 minutes until foamy.
In a stand mixer bowl, combine bread flour and salt.
Add yeast mixture and 2 tablespoons olive oil.
Mix with dough hook on medium speed for about 8 minutes.
Add extra flour 1 tablespoon at a time if dough is too sticky.
Mix until dough is soft and slightly tacky.
Cover and let rise at room temperature 1–2 hours until doubled.
Alternatively, refrigerate overnight for slow rise.
Preheat oven to 475°F (245°C) with rack in lower third.
Turn dough onto lightly floured surface.
Shape into a round ball.
Roll into a thin crust.
Transfer to parchment-lined baking sheet or pizza pan.
Add sauce and desired toppings.
Brush edges with remaining 1 tablespoon olive oil.
Bake 12–15 minutes until crust is golden and cheese is bubbly.
Remove from oven, slice, and serve.
