Set your oven to 275°F and line a baking tray with parchment paper.
In a saucepan, melt the butter over low heat. Add the ranch dressing mix, Italian dressing mix, and sugar, whisking until fully combined and smooth.
Place the mini saltine crackers in a large bowl. Pour the butter mixture over them and gently toss until evenly coated.
Spread the coated crackers onto the prepared baking tray in a mostly even layer.
Bake for 25–30 minutes, stirring every 5 minutes to ensure even baking and coating.
Remove from the oven and allow the crackers to cool slightly so they crisp up fully.
